Tart of the Month : May
Berwick May Day Tarts
From the most northerly town in England, these tarts are made for the festivities around the annual Riding of the Bounds.
Ingredients
Shortcrust pastry:
110g flour & 55g butter
Filling:
55g butter
55g caster sugar
1 egg (beaten)
25g ground almonds
55g currants
25g mixed peel
Icing:
2 tbs icing sugar & 2 tsp lemon juice
- Make up the pastry and chill. Then roll out and line the sections of a 12 hole tart tray.
- Cream together the butter and sugar, then beat in the egg until smooth.
- Quickly beat in the almonds and fold in the currants and mixed peel.
- Share out the filling between the pastry cases.
- Bake at 190C/375F/Gas 5 for 10 minutes. Then turn down the heat to 170C/325F/Gas 3 and bake for a further 10 minutes.

Mix the icing sugar with the lemon juice to make the icing and drizzle over the tarts while they are still warm.

Phew, Mars has gone ‘direct’ and we can expect plans and activities to move forward more smoothly than in recent months. Mid month when Venus shines an extra bright spotlight on us the way we value our feminine selves will take precedence. Where we have impoverished ourselves regarding love and money will need rectification and will gradually bring rewards. The 13th and 14th May are excellent dates for expansion, good trade, bright ideas and meetings. The last few days of May are light in energy so use a light touch with dealings as well. Generally, a productive and innovative month beckons!
